For me, dreamland comes in the form of afternoon tea at The Empress. Then again, I think any blogger would love the antique chandeliers, marble tabletops and timeless columns accentuated by all the bronze detailing and pretty palm plants. It’s when you add in the endless chocolates, cakes, scones, champagne and best creamy Early Grey I’ve ever tried that the space really becomes my definition of heaven. I left with the best kind of food coma, as well as some great photos by Vellar.

Vellar and I had the opportunity to try the new “Royal Champagne Afternoon Tea” series at Fairmont Empress. In celebration of the Duke and Duchess of Cambridge’s visit to Canada, the hotel launched a special tea series for the months of October and November. We had the pleasure of enjoying the tea service alongside Chef Darren McGrady, former executive chef to the royal family who was the curator and creator of this special series. We loved chatting with Chef McGrady about the history of the items selected for the tea, as well as the anecdotes of his time in the palace. My personal favourites were the chocolate birthday cake which Her Majesty enjoys yearly, as well as the vanilla bean shortbread that Princess Margaret’s daughter would take back to college with her.

All in all, it was a memorable afternoon of delicious treats in beautiful setting alongside wonderful company. Thanks for having me, Fairmont Empress!
